I would leave Paris for later, taking into account the transfers, these two nights of yours are a complete zero in Paris. Move in and out, but don't look at the city itself.

In Bruges you can rent bicycles, drive to the coast, and back; there are bike paths. Bicycles are not very good in the center of Amsterdam, as there are a lot of people.

If you leave Paris (although I strongly advise against it), then reduce Cologne, give up Düsseldorf. Otherwise, some crossings and you have to break down again and move on. You change a lot of hotels for a week in total (I understand that you are on public transport, besides).
