You won’t be able to go to Chiragan just like that, because they made a five-star hotel in it, there is a guard at the gate. And in Dolmabahce without any problems, buy a ticket and go.
You can eat deliciously for 10-15 liras per person, or you can even for 50, depending on the distance of the cafe from the hiking trails.

The main thing is to stock up on a map, a rough plan of what you want to see, and then - to wander, drive, wander around for your own pleasure, find out where which excursions are. In the old part of Istanbul, everything is nearby, on foot. Yes, in three days you will not have time to leave Sultanahmet, and why?
