Is there access to the sea at night? Are there many people from 15.11? Where can a non-swimmer swim? What does "ebb" mean?

At night we want to sit near the sea on sun loungers and breathe. Is it open there? What about the winds after 15.11? What is a low tide? Where can a non-swimmer 185 adult swim in this hotel? We rested in Hurghada at Sunny Days el Palacio. I really liked the long coastline and no low tides. What is there in Sharm in the same price range and with a long beach?
