January is not the most successful month for Egypt. Before the end of March, it is not worth hoping that there will be no wind. With a child it is better to go to Hurghada. I would recommend Lilly Land Beach (it may not be the best, but it satisfies the requirements you describe) or the neighboring Golden Five.

In Hurghada "Desert rose" . There is direct access to the sea and the lagoon. For the child there is a children's pool, children's sun loungers, a baby shower, as well as a kids club. Watched the kids - they really like it. They feel like adults - complete. The rooms are quite normal. The food is monotonous everywhere, but you will not be hungry. (for a child: rice, chicken, eggs, muesli, cereal, milk, buns, fruits, etc....). There is no noise.
