In Turkey, most often All inclusive. Think for yourself, in principle, it’s not hot there in winter, you can’t swim. The air temperature drops to +7/+12 degrees. Therefore, you won’t spend much on soft drinks .. but you still need to have an idea about the price level. I can only say a few things:

The same Coca Cola in the hotel = $3.5-4
Can of beer 0.33 = €2 (cheapest)

It all depends on how you are going to relax. If you don’t leave the hotel, it’s better to take All inclusive, believe me it’s worth it for a hassle-free vacation. Well, if you plan to go on excursions a lot (and therefore spend little time directly at the hotel), then it makes no sense for you to overpay for All inclusive, because you will hardly have time to take full advantage of it.

Take only All Inclusive, because Turkey can only be attributed to such a holiday as All Inclusive, you will spend much more money if you do not take All. In winter, it is better to take a good hotel with a developed infrastructure and definitely AI. Rest will be mainly in the hotel (it’s hard for me to imagine what a thrill from excursions in winter), which means that the hotel should be good: quality food, indoor pools, billiards, bowling, internet, SPA, etc.
If you want to have a good rest - it makes no sense to save on a hotel, choose it carefully.

In winter, it is better to go to Egypt, it will be cool in Turkey, and thus not very interesting. Especially if you are traveling for the first time. But there is another plus in winter, very cheap excursions and other entertainment, and in summer there is not enough time for this.
