Both hotels are good, I personally visited both and I think they are the best in this area. The difference is that "Quelle" was built earlier, this is the first premium-class hotel in Polyana, and "Fantasy" is newer, it is only 3 or 4 years old. In addition, in Quelle there is a pump room with mineral water in the lobby and the room price includes round-the-clock use of the sauna and swimming pool, but in "Fantasy" this is not. Minor flaws exist everywhere, but they do not count. The staff is polite and attentive, the cuisine is not bad in both hotels, but we usually only had breakfast and ate in the surroundings. As for the New Year, as a rule, they don’t meet it in hotels, but go to restaurants where you can take a walk and dance. The pool and sauna are not open around the clock as usual, I confirm, but we were on the New Year 2013 and no one closed it. Went to bathe at one in the morning with champagne. )) And not for a fee. Use of the sauna and swimming pool is included in the room rate. It may not have been included before, but I don't know.

As for food, I know that the bulk of the food is not very good, especially in Soviet sanatoriums. Worse food than in the Karpaty sanatorium, I have never met!. My son is quite a picky eater.
