If you are not skiers, then I would celebrate New Year in Lviv, not in the Carpathians. Another thing is that on New Year's Eve, in Lviv, in the mountains, it's a little bit late with housing, a good one is booked in advance.
I would have stayed in Lviv until 3-4, there are more entertainments at this time. And then for the rest of the time I would go somewhere in the Yaremche-Bukovel region. In Bukovel, non-skiers can climb the mountain on some lifts, look at the beauty, there are also cafes on top (the usual truth, without frills). Below are restaurants, including those with local flavor, and in principle everything (no, well, there is a skating rink and sledges). Private small hotels in the "Carpathian village" style often have their own cafes and often have baths and saunas. It's worth steaming.
But a lot of time to devote to Bukovel is not worth it if you are not going to try to ride. 1 day, what is better to come from Yaremche on something (minibuses or taxis).
If you don’t ride, then it’s better for you to live in Yaremche (and not in villages like Tatarov, Yablunytsya) - it’s cheaper and there are more entertainments (although there isn’t much to do in Yaremche, except for walking).

From Yaremche, with the help of travel agencies or taxi minibuses, you can also ride Kosov, Kolomyia, Manyavsky Skit.
They can also organize a hiking trip to Hoverla (but for the unprepared, it’s better not to go, dubar, you will get tired, sweat, spend a day and then you will come to yourself lying down for another day).
In Yaremche itself, they usually watch a wooden church, Probiy waterfall, Dovbush rocks (I personally would not go there in winter ;-) and a souvenir market. A couple of museums, very modest. The rest is cafes, a sauna.
You can also do it a little differently. Emphasis on Lviv and the surrounding area. Then you can travel around the castles of the Lviv region, various monasteries and go somewhere in the Skole-Morshin area for a couple of days, you can go to Plavya (there is also a chair there so that you don’t go to the top on foot), you can go to Pylypets (there is also a chair with good view and cafe, but there is an old lift). Also in Pylypets there is a Shypit waterfall. Pylypets is located 7 km from the railway station Volovets. These are real mountains.
In such a short time and from another country, you should probably really turn to travel agencies, but pay attention to the fact that neither Lviv nor Ivano-Frankivsk are the Carpathians and mountains. Therefore, living in Ivano-Frankivsk and traveling from there to see something is not an option.

What do you want to see? Perhaps you do not even need Yaremche and Bukovel! These are not the closest Carpathian places to Lviv.

Pylypets (Mount Gemba) - plus - 7 km to the railway with trains, including Lviv is not far away - there are trains and electric trains of increased comfort, but you should not take the 3rd class! - the second most normal.
The village of Plavia is a new small resort, the closest to Lviv, a 2-hour drive along the Kyiv-Chop highway. Slavske (or rather, near it) -ZakharBerkut-hl complex. The lift is the longest in Ukraine and the slowest - you can definitely consider the mountains. But not new. Also from the railway branch km-x in 10-close.
As for the roads, this year is a very snowy winter and the forecast is also only snow and transmits. So you need to take into account the fact that everything may not be so optimistic with regional roads, because even on national roads there are now traffic jams and snow drifts.
