A good hotel and the number of days - this, of course, depends on individual expectations and wishes. Personally, it was comfortable for me to see all the main sights at a calm pace in a week.
For me, a good hotel is the one from which it is convenient to get to most of the interesting places in the city, so for the first time in Istanbul I lived in the Sultanahmet district and did not regret it, because I spent one and a half to two hours a day traveling in not the most comfortable Istanbul transport it would be embarrassing. Sultanahmet is full of hotels for every taste and budget, it is difficult to advise something specific.

The beaches in Istanbul are not very good, after all, it is a large port city, the sea does not shine with cleanliness. But if you really want to, then within the city there are the beaches of Florya, Yesilkoy, Jaddebostan, Kucuk Su, you can also take a boat ride to the Princes' Islands.

A good hotel in Istanbul is expensive. Given your desire for inexpensive shopping, sightseeing (it will take at least 5 days to see them briefly, including the Grand Bazaar and the Egyptian Bazaar), you will have to live in Laleli, which is quite rightly advised by Bobrovska and jlena75.
