How to travel by car to Italy with a Polish visa?
First open visa. It is clear that the entry through Poland. I plan to stay in Poland for a day or two. Next I plan Slovakia - Hungary - Slovenia - Italy. It is not advised to go through Austria, although it would be closer to me that way. Can I have problems? If yes, where and which ones? Also help to choose the right route.

ahem ... Usually, such questions should be raised BEFORE they opened a visa, and then open a visa for the country that fits the conditions (for example, where there are more days of stay).
Now the Poles at the entrance have every right to check hotel reservations, the purpose of the trip, etc. If by the day Poland is not a country where it is planned to spend more days, among all the others (checked by booking hotels), then they can turn back, and they will 100% right, as sad as it sounds.
The probability is not very high, however, but no one can say for sure whether you will pass or not.

The visa is economic (not shopping), housing is provided by the inviting party, how to confirm this upon entry?

Ok, we'll work something out with this. Where to go next? As an option Kosice - Budapest (bypass) - Ljubljana - Palmanova. What do you think about this route?

We traveled this route ourselves. But through Austria and the Czech Republic is better, as it seemed to me on the way back

Better, but with the first Polish (!) Schengen in a clean passport, I was strongly discouraged from traveling through Austria. Although, under slightly worse circumstances, I could earn money in Hungary, and in Italy, and even in Slovakia. Therefore, we went along the route indicated by me, only from Ljubljana we did not go to Palmanova, but along the plain in Trieste.
